If you start gcompris from the command line, something like "LANG=fr_FR.UTF-8 gcompris" *might* set the Default environment to French. However, given that GCompris is supposed to figure out what languages are available and offer you a menu, I guess the real problem is that it is not finding the French module at startup. Either the French module ended up in the wrong place, or you need to set a search path in the environment.
