Here are some fun old video cards for PCs: 

   CGA, 
   MONO
   Hercules Mono Graphics (sp?)
   EGA
   monochrome VGA

The CGA card had NTSC composite video out in addition to digital video out. 
Most modern video boards still emulate the old CGA for backward compatibility. 
The Hercules Mono Graphics card was excellent in its day. 

For more fun, use a Cromemco Dazzler. I think it had only 16 bytes of RAM, 
and used DMA to leach off of main memory. You could tell it what address 
to suck memory from. It was fun to point it to the stack of your running 
program, and watch the somewhat psychedelic sparkles. You could look at the 
screen and know how your computer was running.
