Yes, HP Deskjet560J is japanese localized version of DJ560(c).
It means that it has japanese JIS font image data and recognize
JIS-X201 and JIS-X208 japanese charactors.

except it, it is almost same as english version. graphic mode is also
same as one. it spoke PCL.

Have you tried gs-vflib in PJE or debian-jp or JRPM?
It support deskjet500 series. I got Tiger image with it.
