Bits per pixel can be controlled with the depth option.
e.g. in your /etc/X11/xorg.conf:
Section "Screen" Identifier "Screen0" Device "Card0" Monitor "Dell20" DefaultDepth 16 SubSection "Display" Depth 16 Modes "1600x1200" EndSubSection EndSection
Note the DefaultDepth and Depth lines.
