I said, "Speaking of which, isn't it that you did not *want* to be
able to be patient?" Grammatically questionable (you don't see 出来たい
very often), but I think it works to make a joke.

ピエトローさんの日本語は下手じゃないですよ。まだぺらぺらと言えないけど、頑張っていることがよく分かりますよ。例えば、ブログを書いたり、仕事で日本語だけで話したりしますよね。日本語が難しい言語なので、上手になるまでは結構時間がかかりますよ。
