/var - If you fill /home or /tmp (depending on your arrangement), the 
       mail goes through and the logs get written.
/var/ftp/incoming - (for example) if you fear denial of service
       attacks against any of your exposed services.  Note that many
       of the files in /var/log are subject to abuse by net critters;
       if you're going to be this paranoid, be REALLY careful.
/tmp - another good place for files that accidently get to big for
       your britches.

Anything you might want someday to get rid of entirely by mounting it
NFS from another machine (in my case, /playpen, my development/beta
testing area; /usr/local is now a different concept entirely).
