The choices are RGB, Greyscale, or *Indexed*.  Since "indexed" is greyed
out it means it's your current selection (I'm guessing you loaded an
existing image rather than creating a new one from scratch -- you've got
exactly the same "color depth" as the original image).  Hint: try "rgb".

I've no idea why your man page isn't working.  I suspect it's somehow
related to your mouse. ;-)

If you're happy with your other software, why are you forcing yourself
to use gimp (without reading the documentation)?  It's a linux users
group so it's trendy to make fun of Windows, but if you're happy with it
why not use it?
