I don't exactly see what your question is.
If you like Macs, you're free to buy a Mac Pro from Apple, they'll be happy to sell you 1.5TB of RAM for the low, low price of 28000 EUR extra, and 384GB for a measly 6700 EUR. So the supply is there...and somebody else will also be happy to sell you a monitor that matches the specs of anything Apple puts out.
I don't think Apple is meeting your demand just yet at the price & trim level you're looking for.
