Not sure about Grub2 (mostly RH/Fedora/BSD here), but I know that on
Fedora, it will switch over to framebuffer mode--that is, it will boot
from console, then there is a black screen, then the rest of the text
comes out much smaller--that is, after it's gone to framebuffer.
Sometimes, when booting, I've found it helpful to add 

nomodeset 

to the kernel line.  At some point during boot, it will ask me for a
preferred mode, I just hit space and it continues, without the temporary
black screen while it finds a framebuffer and/or does other things. 


Again, no idea if this is relevant to a) grub 2 or b) Ubuntu.
