There are several ways of achieving this, but looking at your
explanation I think VNC could be the easiest answer. With VNC you can
have a "desktop" that is launched on the "server" machine and you can
connect and disconnect to that "desktop" remotely without closing any of
the applications running on that desktop.

There are other solutions, but I would advice you to look at VNC first.
