"UTF8" is a red herring; *macs doesn't care about UTF8 until you
write it out.

SKK (just to keep my hand in), platform-IM-in-a-*term with
keyboard-coding-system set appropriately (to 'utf-8 on the Mac, left
alone in kon, YMMV) and terminal-coding-system set to 'utf-8, anthy
with its helper app-in-a-process, or canna.  XEmacs also supports Wnn
with a compile-time option.  There's also XIM support for kinput2 (for
example), but kinput2/XIM is pretty painful.

GNU Emacs supports Quail (a souped up, generalized SKK), and probably
Canna and Wnn (via Lisp code that talks to sockets on cannaserver and
jserver), out of the box.
