My ./japanese script reads the following:

GTK_IM_MODULE="uim-anthy" XMODIFIERS=@example.com=uim-anthy LANGUAGE=ja_JP.UTF-8 
LANG=ja_JP.UTF-8 LC_ALL=ja_JP.UTF-8 ${1+"$@"}

Obviously, GTK_IM_MODULE and @example.com (XIM) would be your input methods of 
choice, and the end bit would be replaced by your program name.
