I can highly recommend the "From Nand to Tetris" course: https://www.nand2tetris.org/

The small project therein is building a full 16-bit computer from just NAND gates (and a DFF for sequential logic) in a hardware simulator using a simplified HDL, then building an OS on top of it and finally writing Tetris. I've only finished the first half so far, but it's a great way to get into HDL and learn how computers *really* work. :)
