The Apple UI standards (as implemented in Mac OS X) are reasonably
well-documented somewhere on the ADC, but I forget where.  If you look
up CUA you'll find older discussions of the WIMP interface and
keyboard stuff for Motif/Microsoft Windows.

If you are going to read up on the Apple UI standards, I would also suggest reading "The Humane Interface" by Jef Raskin.  You can see a lot of his input and ideas in iOS.  (Be forewarned: his Canon Cat was, to the best of my knowledge, a huge failure despite his efforts to convince you otherwise).
