Professional means someone that does something as a profession.
Ironically, what you described is more fitting to the definition of Amateur, someone who does something for the love of it. Modern English uses words strangely. A craftsman or a journeyman WILL be an amateur as well as a professional. :-) Neither word has anything to do with the level of training. That is just an assumption made by people who speak the language.
Believe me, I know plenty of professionals that know squat about their job. :P
