Ah yes, I forgot to mention this. If you simply want to back up your DVD collection with no regards to disk space, Jim's method is the best way. Then, you just use your normal DVD watching tools.
My way is designed to minimise the contents of the DVD and/or optimise them according to my viewing preferences; whether I decide to keep the image on disk or burn it out to DVD depends on the application. Also, to back up a dual-layer DVD to a single-layer one, one usually needs to re-encode the main title.

All the ingredients are there, just mix in your favourite flavours to make your own special sauce. ;)
