The subscribe command, as you guessed, is something different--it's for
mailing lists to which you subscribe and enables you to reply to the
list by hitting L.  (Mostly useful for lists which don't munge headers,
and have you, by default, reply only to the original poster.)

The mailboxes parameter might do what you want, but I'm not sure.  I use
mutt with pop, though I have with imap in the past.  In both cases, I
have my list of mailboxes (I use mbox format) in my $HOME/Mail
directory.  When I open mutt, I hit c and get open mailbox ('?' for
list) then hit tab and it shows me my list of mboxes.  I can navigate
that with vi commands (such as k or j) arrow keys or the space bar.
