[tlug] GMail Settings

I've decided to use GMail to get around whatever the delays are with
my other e-mail.  I set GMail to UTF-8 and I'm wondering if I need to
set it to plain text as well?  I see "Plain text" above this - do I
have to click on that every time or is that in the settings as well? 
(I couldn't find it there.)  I'll go back to looking - sorry for the
stupid questions.
