Any of them are easy when you know how. :)
If you're looking for source, I know that Gentoo is quite easy to get
working with Japanese. (See my page on this

Slack is not hard to get working with Japanese either (also covered on
that page).
If you use the langx script that I mention on the page, you can have
your Japanese input with English menus.
