During boot process, you may see the start of rc.init bootup procedure
and the message like this: '[I] for interactive mode.'
So, you may hit "I" keys for several times, so it will go to interactive
bootup mode, and you will be able to skip the network interface(s) start
up.

Other solution is that: 
Edit the file /etc/sysconfig/network-scripts/ifup-eth0 .
and change the line
    ONBOOT=yes
to
    ONBOOT=no
