The default value (default ccdef file to be read from kinput2) is defined in the resource file <X11>/lib/X11/app-defaults/Kinput2. You can override it with your .Xresource file or kinput2 command's argument. Also, you can find ccdef files in direcotry <X11>/lib/X11/ccdef. Back to the original question, it looks katakana are available by capitalizing the vowels (like 'kAtAkAnA'), if you did not alter the default.
