well, I'd set up the printer either directly connected to the Linux box
(and have Linux act as a print server for your other machines), or have
the printer have its own IP address on the LAN and let everyone print to
it that way (you might still have to have the Linux box act as a print
server, unless the printer can handle SMB connections on its own).

As far as which printer is better, any PostScript-compatible printer
should work equally well with Linux... we have an Epson LP-9200PS2 here,
which does 1200x1200dpi and 24ppm, but it's probably expensive.  It has
lots of paper feed problems, too, so I'd stay away from the Epson.  Our HP
LaserJet 4+ in the states has required exactly one service call to fix a
broken plastic clip, in 4 years that we've had it.  If it were me, I'd go
for an HP-made PostScript compatible printer (the LJ4+ is not PostScript).
