You're probably referring to me. It is a known issue I have not taken
time to fix and mostly happens on TLUG. For some reason Thunderbird
shows the correct address when I write and then shows a different one
when I send. I am having problems with my .deb version of Thunderbird
getting replaced by the snap version in spite of the fact I removed snap
completely only to have something in Kubuntu's underlying code add it
back in. There are a couple of under the hood issues regarding crossed
address assignments I have made bug reports with supporting
documentation to Thunderbird but I keep finding a new shiny thing to
chase before we completely fix it.
