The Red Hat training might be interesting for you.

An alternative way to 'learn linux' is learning by oneself. Once
one has a basic idea one can set goals, implement them and learn
along that way:
- setup a mailserver
- compile software
- setup LinuxFromScratch
- ..

(Full Disclosure: I work a Red Hat. My opinion that the trainings
are great is independent thou ;)

Christian,

Actually, I'm looking at a simpler level. I want to get a clearer picture of Linux, how to work with files, what it is I'm looking at when I see and extension, using commands such as sudo or something, extensions, etc. Years ago I bought a simple Ubuntu book but it doesn't really include these explanations.
