How can you put an international mobile phone number into
doorkeeper? It rejected everything I tried, so I gave up and left
it blank.

No problem, I see that you successfully registered.

BTW, only emails are collected, not numbers. 
(But you raise an interesting techno-cultural issue about mobile emails vs number)
