Andreas,
I agree with Nikolay who suggested getting an Android phone, but if
you're set on having an MP3 player for whatever reason (I have one in
addition to my Android for use at the gym), then I recommend Cowon.
I have purchased two Cowon iAudio players. I don't know if everything
about them is technically completely FOSS, but they are one of the few
MP3 devices that mentions Linux in their system requirements.
Absolutely no need for additional software. It shows up as an external
HD (actually, recently Ubuntu understands it's a music player, but still
treats it like an HD). I use Amarok 1.4 to transfer playlists, but you
can use whatever the heck you like.
They also support open source audio formats such as OGG, and a wider
variety of formats than I have seen on most devices.
The players I bought have been reliable and long lasting, so they
measure up in terms of quality.

Hope that helps.
