Of course, there's no actual Windows stuff in the stack here - Microsoft just happen to have invented the filesharing protocol; The implementation on the box is free software...

ext3 should work fine. (I think the default it shipped with was XFS.)

OK, makes sense. (Although the thing does have a built-in scheduler, so you could still get the backups working when during holidays even without hacking the box.)
You may have seen this page:

It has some existing hacked firmware that will probably work (fingers crossed) on whatever you buy, but I guess there's a slight risk (I don't know much about this kind of thing) that they'll have done something to the hardware that you buy that makes it incompatible with the older firmware versions out there, in which case you may have quite a bit more work to do to break in.
