The password--if you're doing this using CUPS, it wants the root password--as Ubuntu doesn't use a root password by default, I'm not quite sure how it would work. Hopefully, an Ubuntu user on the list can give a better answer. One option is to use sudo to create a root password, something like sudo su then passwd.
