A much harder thing to do than if it were mounted as an ext3 volume all along. One of the reasons why ext3 is better than ext2 is it's resistance to data corruption in such situations. So I suppose what I'm trying to say is if you entrust your data to ext2 then fair enough; if you then want to entrust that data to ext2 on Windows then fair enough.
