dvdbackup[1] will just dump to the harddisk.

# dvdbackup -M -i/dev/dvd -o/my/dvd/backup/dir/

where you can play it using

# xine dvd://my/dvd/backup/dir

or

# mplayer -dvd-device /my/dvd/backup/dir dvd://
