No problem. Just add Japanese to the "supported languages," and make sure
you have SCIM-Anthy installed along with supporting libraries. (The package
manager will take care of the latter.) Your interface will still be in
English. 

When you add Japanese support, the internationalization files for Open
Office should be installed automatically; but if they are not, search for
them in the package manager and install them.

(I'm using openSUSE 10.2, and use KDE 3.5.6 as desktop; but the basics
should be the same for your distro.)
