... and this morning I discovered that the problem is less serious than
this.

"pdftotext -raw" does extract all of the data; it just looked as though the
file was truncated because any text written sideways is recorded at the end of
the file, and so emerges last in the output stream.

Sorry for the false alarm.  I'll go back to work on this now ...
