Except that you need the characters rendered correctly on your local system.

I do this sort of thing many many times a day. About half the time I'm
doing things to files coded using euc-jp and the other half in utf-8
(*). I need to make sure both the editor on the server and the local
terminal window are using the same (correct) coding. It's not rocket
science. I've been doing it since I started using X11, way back in the
last century. (Of course back then things like Shit_JIS were part of
the mix...)
