I finally got it working.  I was pointed to this page:

- and while I had previously done what it said (several times in
fact), *this time* when I went there, "Japanese (Anthy) (IBus)" was an
option (which it wasn't before).  Once I added that: 日本語入力万歳ですよ!

Either it drifted in for whatever reason (like the disappearing menus
sometimes working and sometimes not), or my (in the meantime)
installing some dictionaries like (Very Good Resource BTW!!): "Tagaini
Jisho" maybe helped out?

In any case, it's working now.
