8kHz is a low sampling rate, good for saving bytes 
8 bit samples are also good for saving bytes 

Is arecord outguessing you? 

Is arecord looking at the 8 bit samples and 8kHz sampling rate and 
trying to "help" you further save bytes by recording in Mono? 

If arecord is saying Mono, 
then crummy stereo connectors are not the issue.
