I find that not to be true, in my (albeit limited) experience. Overall, I
like my job. But sometimes, you have to do things that you really don't
want to do, things that "suck". Why? Because you are being paid to do what
the company wants, not what you want.

I agree with you that one should look for a job that one enjoys, but to
quit the first time you have to do something you don't want to is a bit
unrealistic.
