You could manually modify /etc/X11/XF86Config file.
Go to Subsection "Display" under Section "Screen".
There, you can change both color depth and resolution.

e.g.
    Subsection "Display"
            Depth       16
            Modes       "1024x768" "800x600" "640x480"
    EndSubsection

You can have several modes or several screen
subsections there, and switch them with some
key strokes. I think it was something like
ctrl+meta++(plus) and ctrl+meta+-(minus).

Color depth can be 8(256 colors), 16(65,536 colors),
32(4,294,967,296 colors)..  depending on how much
memory your video card has.

Right now (at work) I'm working with my laptop, so
I can't really test with that keystroke thing
(cuz the graphics card is shitty and seems to
support only one res setting), but I'm sure you
can find lots of tips/info from Google.
